To many, hash browns are the special addition to an English Breakfast that you only get when you’re out of the house for brunch. They’re amazing, but for some reason when we make a cooked breakfast at home we either somehow forget about them, or we think that crispy hash browns are just too much hassle to make.
If you’re one of the few people who makes hash browns at home all the time, then firstly congratulations – you’re ahead of the game. Secondly, you already know what this recipe is about to show you: homemade hash browns are both easy to make and so tasty you’ll never leave them out of a cooked breakfast again.
- 4 maris piper potatoes
- 1 white onion
- 1 egg
- salt and pepper
- vegetable oil
1. Grate the potatoes, place in the middle of a tea towel and squeeze out the moisture over the sink
2. Peel and chop the onion
3. Crack the egg into a bowl and beat it, then add the grated potato, chopped onion and a big pinch of salt and pepper
4. Add a big dash of vegetable oil to a frying pan. Once hot, add spoonfuls of the mixture into the pan and flatten into small patties (about 1cm thick)
5. Cook for 2 – 3 minutes on each side, or until crispy
Tip: If you fancy a change from the usual cooked breakfast, try serving your crispy hash browns with avocado and poached eggs
