To make 4 portions, you’ll need:
- 2 cans of cannellini beans
- 1 Knorr vegetable stock cube
- 64g tomato paste
- BBQ sauce
- 2 tsp sugar, honey, or agave
- Optional extras: mini cooked sausages, peas, carrots, grated cheddar cheese
Cooking instructions:
- Drain and rinse the cannellini beans.
- Dissolve 1 Knorr vegetable stock cube in 250 ml of boiled water.
- Heat a large, wide-based pan (preferably non-stick) with a small drizzle of vegetable oil over a medium-high heat.
- Once hot, add the tomato paste, cannellini beans, vegetable stock, hickory smoked BBQ sauce and 2tsp sugar and cook for 5-10 min or until thickened to a baked bean consistency.
- Add your extras, portion into containers, and chill or freeze for easy breakfasts.
