Hat Yai Rickey by OPIHR
Take black lemon OPIHR gin, add a squeeze of lime, slices of red chilli and a dash of syrup. The result? A cracking good cocktail that goes perfectly with Thai-Style Hat Yai Garlic Fried Chicken.
- 50ml black lemon OPIHR
- 40ml brown rice syrup
- 20ml lime juice
- 1 lime
- Handful of coriander
- 5 slices of red chilli
- Soda water
Step 1: Combine the gin, syrup, lime juice, and soda water
Step 2: Garnish with a lime wedge and coriander sprig
Step 3: Glug with glee

Laced with all the best spices this gin-based cocktail pairs perfectly our Indian-Style Vegetable Pakora Chaat. Love a bit of heat? Bottoms up.
- 35ml Opihr London Dry Gin
- 20ml Tamarind syrup
- 1 tsp of pomegranate seeds
- Tonic water
- 2 slices of dried mango for garnish
- Spice mix for the rim (optional)
- Wedge of lime
?Step 1: Grind your spice mix in a pestle and mortar. This includes cumin seeds, chilli flakes, citric acid and sea salt
Step 2: Run a slice of lime around the rim of your glass
Step 3: Dip the rim of your glass in the spice mix
Step 4: Combine the gin, syrup and pomegranate seeds. Then top the drink with tonic water.
Step 5: Stir gently, then garnish with dried mango
