Punchy BBQ Mango Salsa
We’ve been experimenting with summer salsas, and our new favourite twist has got to be the addition of ripe, sticky mangoes. This sweet, spicy salsa is the ideal topping for succulent chicken, BBQ meats and just about anything on the grill. Plus, considering how outrageously delicious it is, it’s so simple to throw together.
Cook time: 10 min
Serves: 3-4 people
2 spring onion
1 green chilli
Step 1: Top, tail and peel the mango, then stand the mango upright and very carefully slice the flesh away from the stone
Step 2: Dice the mango flesh finely, discard the stone
Step 3: Trim, then slice the spring onions, and chop the coriander finely, including the stalks. Slice the remaining green chilli finely and dice the tomatoes
Step 4: Add the remaining diced mango to a bowl with the sliced spring onion, chopped coriander, diced tomato and sliced green chilli.
Step 5: Drizzle with a little olive oil, season with a pinch of salt and give everything a good stir – this is your mango salsa
