We’re talking about ginger cake. A classic that’s so steeped in the British imagination, you’d probably forgotten that this retro sweet treat even existed. Traditionally baked with a variety of heady spices, the star of the show was always Jamaican ginger, famous for being the fieriest, most fragrant variety in the world.
Whip up our take on this tea-time classic with a selection of pantry staples. You might not be able to get your hands on Jamaican ginger, but fear not, a hefty spoonful of dried spice will do the trick. Finish it all off with a drizzle of citrusy icing and a sprinkle of lime zest to really make your spices sing.
Ginger & Lime cake
Serves 8 – 10
Total time 1 ½ hour
75g golden syrup
75g black treacle
75g brown sugar
1 tbsp ground ginger
1 tsp ground cinnamon
1 tsp ground nutmeg
1/4 tsp ground black pepper
1 tsp bicarbonate soda
1 tsp salt
100g icing sugar
1 lime (juice & zest)
Step 1 Preheat your oven to 180°C/160°C fan.
Step 2 In a large bowl sieve the flour, spices and bicarbonate of soda.
Step 3 Add your butter, salt, syrups, sugar and 50 ml of water into a large saucepan. Heat the mixture over medium heat until the butter has melted and the sugar dissolved.
Step 4 Pour over your spiced flour and mix well. Add your eggs and mix again.
Step 5 Line a cake tin with greaseproof paper. Pour your mix into the tin and bake for 45 minutes.
Step 6 While your cake is baking, make your icing. In a small bowl, add your icing sugar, lime juice and a few teaspoons of water. Mix until you have a thickened icing that’s easy to pour.
Step 7 Remove your cake from the oven and leave it to cool on a cooling rack.
Step 8 Drizzle over the icing and sprinkle with the zest of your lime.
