Gousto’s Mango and Lime Marinade

We know the loss of Nando’s Mango and Lime Marinade has hit some of you hard, and although we may not be as cheeky as its former restaurant home, we are here for you – and want to bring you a peri satisfying replacement to help you through this difficult time.

While we know we can never take the pain away, having our Peri Peri Chicken for dinner means there’s no limit to the number of sides you can order, no queues at the till, and no waiting around for a table. So maybe we’re biased but we’re pretty sure this homemade marinade will help ease your pain.

You can whip up this zingy sauce in 10 minutes. And while it’s perfect when partnered with chicken, we also love it drizzled over grilled salmon for a seafood option, or mixed with a little olive oil for a zesty salad dressing. So no matter what’s in your fridge – when that craving hits, we’ve got you covered.

Here’s how to make it.

Ingredients

  • 2 ripe mangoes
  • 2 spring onions
  • 1 red chilli
  • 1 lime
  • 20ml red wine vinegar
  • 1 garlic clove
  • 1 tsp dried oregano
  • 10g coriander
  • 1 tsp smoked paprika
Recipe
1. Top, tail and peel the mangoes then stand them up and slice the flesh away from the stones. Discard the stones and lightly dice up the flesh.
Tip: If you feel resistance from your knife when slicing the flesh away, you’re probably hitting the stone!
2. Deseed the red chilli and peel the garlic. Chop the de-seeded chilli, peeled garlic and the coriander roughly. Then top and tail the spring onions, and chop in to rough chunks. (Don’t worry about finely chopping everything, you’ll blend all the ingredients in the next step.)
3. Add all the chopped ingredients to a blender along with the dried oregano, smoked paprika, juice of the lime, red wine vinegar and 1/2 tsp salt. Blitz everything together until it’s completely smooth.
