Garlicky Pine Nut Brussels Sprouts (That Are Also Vegan)
If you’re so done with the Brussels sprouts and bacon cliché, then you’ve come to the right place.
Not only are these 3-ingredient sprouts simpler, they’re also just as tasty,* vegan and they’re cooked on the stovetop, so they won’t need the oven at all.
So why not switch up the script when it comes to sprouts and try these instead? Trust me – you won’t regret it.

Ingredients (Serves 4)
2 Garlic cloves
200g Brussels sprouts
40g Pine nuts
Method
Step 1: Give the Brussels sprouts a rinse, and slice into thirds.
Step 2: Peel and finely slice the garlic.
Step 3: Heat a large, wide-based pan (preferably non-stick) with a drizzle of olive oil over a medium heat.
Step 4: Add the sliced sprouts to the pan with a pinch of salt and pepper, and cook, stirring frequently, for 10 min or until starting to caramelise.
Step 5: Once they’ve lightly browned, add the garlic and pine nuts to your sprouts for 2-3 min or until fragrant.
And that’s it! Simple, vegan, garlicky Brussels sprouts, that won’t take up precious space in the oven on Christmas Day.
