Vegan Ice Cream Recipe

2 cans of coconut milk

3 tbsp agave or maple syrup + more to taste

1 tbsp vanilla extract or vanilla bean paste

Step 1: Shake the coconut milk cans, then combine the three ingredients together in a bowl.

Step 2: Pour the ice cream mixture into an ice cream maker, churn until frozen and then transfer to an airtight container and freeze for 1 hour before serving.

Or, if you don’t have an ice cream maker, pour the mixture into an airtight tub and place in the freezer.

Step 3: Remove the ice cream after 30 minutes and give it a good mix up, scraping down the sides of the container and making all the frozen bits are mixed through.

Step 4: Return to the freezer and repeat the process until the ice cream is almost completely frozen.  Then return to the freezer for a further hour to fully set before serving.
