This one's full of delicious, nutritious goodness! Freekeh (a whole grain packed with fibre and protein) is served with roasted butternut squash (cubed to save you time!), Tenderstem and sweet red onion petals. All topped with soft goats’ cheese rolled in toasted hazelnuts… Did someone say ‘superfood’?

Cooking Instructions
Instructions for 2 people (double for 4)
1 Warm Tenderstem Broccoli & Goats' Cheese Salad

Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7

Rinse the freekeh, then add it to a pot with plenty of cold water and bring to the boil over a high heat

Cook for 20-25 min or until tender but with a bite, then drain and return to the pot

2 Warm Tenderstem Broccoli & Goats' Cheese Salad

Meanwhile, add the butternut squash cubes to a large baking tray with a pinch of salt and a drizzle of olive oil

Put the tray in the oven and cook for 5 min

Meanwhile, peel and finely chop (or grate) the garlic 

Chop the Tenderstem broccoli in half

Peel the red onion[s] and cut into quarters

Add the onion quarters and Tenderstem broccoli to the butternut squash baking tray with a pinch of salt and a drizzle of olive oil and roast for 20 min further until tender

Meanwhile, add the hazelnuts to a separate baking tray and put them in the oven for 4-5 min or until they've darkened slightly in colour (toasted)

Once toasted, set them aside to cool before chopping finely

Tip: watch them like a hawk as they burn easily!

6 Warm Tenderstem Broccoli & Goats' Cheese Salad

Meanwhile, combine the red wine vinegar, honey, chopped garlic, a very generous drizzle of olive oil and a pinch of salt in small bowl – this is your dressing

7 Warm Tenderstem Broccoli & Goats' Cheese Salad

Roll the goat's cheese log[s] over the chopped hazelnuts 

Slice the nutty goat's cheese into slices (or break it up into rough pieces)

Add the freekeh and dressing to the roast vegetables and give everything a good mix up
