Cooking Instructions
Instructions for 2 people (double for 4)
1 Slow Roasted Heritage Tomato, Feta & Lentil Salad

Preheat the oven to 160°C/ 140°C (fan)/ 325°F/ Gas 3

Rinse the puy-style lentils in a sieve under cold running water

Then, add the puy-style lentils to a pot with plenty of cold water, bring to the boil over a high heat and cook for 20-25 min or until cooked with a slight bite

Once done, drain and rinse under cold water until cooled slightly

While the lentils are cooking, chop the heritage tomatoes and cherry tomatoes in half 

Add the chopped tomatoes to a baking tray with a generous drizzle of olive oil and a pinch of salt and sugar

Put the tray in the oven for 20-25 min or until softened

Meanwhile, crumble the feta onto one side of a separate baking tray and add the pine nut & seed mix (leave some space on the tray for later!)

Put the tray in the oven for 20 min or until golden and crisp

4 Slow Roasted Heritage Tomato, Feta & Lentil Salad

While the feta and pine nuts are baking, peel and finely chop (or grate) the garlic

In a large bowl, combine the chopped garlic (don't like raw garlic? Go easy!) with the Dijon mustard, balsamic vinegar, 3 tbsp [6 tbsp] olive oil, 1 tbsp [2 tbsp] cold water and a pinch of salt and pepper – this is your dressing

Chop the basil finely, including the stalks

Slice the ciabatta roll[s] into 6 [12] slices 

Once the feta has been in the oven for 15 min, remove the tray from the oven and add the ciabatta slices to the other side of the tray

Drizzle the ciabatta slices with olive oil and season them with a pinch of salt 

Put the tray in the oven for a further 5 min or until lightly crisped

Add the drained lentils and baby leaf salad to the bowl of dressing and give everything a good mix up – this is your lentil salad
