This simple, family friendly veggie tray bake is packed full of punchy Mexican flavours – and goodness! You'll coat sweet potato, red pepper, cherry tomatoes and black beans in smoked paprika, cumin and chilli and roast it all together. Top with feta cheese and chipotle yoghurt on the side. (Gluten-free, suitable for coeliacs).

Preheat the oven to 200°C/ 180°C (fan)/ 425°F/ Gas 7
Peel and chop the sweet potato[es] into bite-sized pieces
Deseed the red pepper[s] (scrape the seeds and pith out with a teaspoon) and chop into bite-sized pieces
Cut the cherry tomatoes in half
Add the chopped sweet potato, red pepper and cherry tomatoes to a baking tray
Drain and rinse the black beans
Add the black beans to the vegetables and give everything a good mix up
Combine the smoked paprika, ground cumin and chilli flakes (Can't handle the heat? Go easy!) in a small bowl with 3 tbsp [6 tbsp] olive oil
Season with a pinch of salt and pepper and give it a good mix up – this is your spice mix
Add the spice mix to the vegetables & black beans and give everything a good mix up
Put the tray in the oven for an initial 15 minutes
Meanwhile, crumble the feta roughly
Chop the coriander finely, including the stalks
When the vegetables have been in the oven for 15 min, sprinkle the feta on top, return to the oven and cook for 5 min further or until the sweet potatoes are tender
Meanwhile, combine the chipotle paste (Can't handle the heat? Go easy!) with the natural yoghurt in a small bowl – this is your chipotle yoghurt
Serve the black bean, sweet potato & feta bake and drizzle over the chipotle yoghurt
Garnish with the chopped coriander
