Cooking Instructions
Instructions for 2 people (double for 4)
1 Flatbreads With Roasted Vegetables & Mozzarella

Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7

Slice the chestnut mushrooms 

Top, tail and slice the courgette[s]

Cut the cherry tomatoes in half

Peel and finely chop (or grate) the garlic

Add the naan bread to a baking tray

Put the tray in the oven and cook for 5 min

Meanwhile, combine the chopped garlic, sliced courgettes, mushrooms, chopped cherry tomatoes and dried oregano in a large bowl with a large pinch of salt and a drizzle of olive oil

Give everything a good mix up – this is your vegetable topping

Add the vegetable topping to a baking tray and put the tray in the oven for 10 min or until the vegetables are starting to soften and brown

Meanwhile, tear the mozzarella into rough bite-sized pieces

Cut the black olives in half 

 

5 Flatbreads With Roasted Vegetables & Mozzarella

Remove the browned vegetables from the oven

Divide the topping between naan breads

Sprinkle the shredded mozzarella over the vegetables

Add the grated Italian hard cheese

Top with the olives

Return the topped naan to the oven for 10-15 min or until the cheese has melted and started to brown – this is your roasted vegetable flatbread

Meanwhile, add the lamb's lettuce to a bowl

Add a drizzle of olive oil and season to taste, then give everything a good mix up
