Cooking Instructions

1 Goats' Cheese With Spicy Green Chutney

Boil a kettle

Add the bulgur and 1/2 [1] vegetable stock cube to a pot with a lid, with 180ml [360ml] boiled water, cover and place on a medium-low heat

Cook for 5-7 min or until almost all the water is absorbed

2 Goats' Cheese With Spicy Green Chutney

Meanwhile, heat a large, wide-based pan (preferably non-stick) over a high heat

Add the cumin seeds and cook for 1 min or until fragrant

Transfer the toasted cumin seeds to a pestle & mortar and keep the pan for later

Peel and finely dice the red onion[s]

Peel and finely chop (or grate) the garlic

Remove the bulgur from the heat and set aside, covered, for 10 min

Meanwhile, slice the courgette[s] into quarters lengthways, then chop into bite-size pieces

Peel the ginger (scrape the skin off with a teaspoon) and finely chop (or grate)

Chop the coriander finely, including the stalks

5 Goats' Cheese With Spicy Green Chutney

For the chutney: crush the chopped coriander, toasted cumin seeds, chopped ginger, chilli flakes (can't handle the heat? Go easy!) and 1/3 of the chopped garlic in the pestle & mortar

Add 2-4 tbsp olive oil and the rice vinegar then season generously with salt and pepper – this is your fresh chutney

Tip: alternatively, use a food processor

 

6 Goats' Cheese With Spicy Green Chutney

Return the reserved pan to a medium-high heat

Once hot, add the diced onion and remaining chopped garlic and cook for 1 min

Add the chopped courgette and cook for 6-8 min or until tender

 

7 Goats' Cheese With Spicy Green Chutney

Fluff the bulgur with a fork

Once the courgettes are cooked, add the bulgur to the pan

Break the goats' cheese into chunks

Mix half of the goats' cheese and half of the chutney through the bulgur (keep the rest for serving)
