Get all your ingredients and equipment ready
Skim through these steps, then wash your fruit and veg
Note: Equipment and pan sizes vary. Make sure you cook food thoroughly (even if it takes you a little longer than 10 mins)
Now, let's get started!
Cut the halloumi into bite-sized cubes
Heat a large, wide-based pan (preferably non-stick with a matching lid) with a drizzle of vegetable oil over a high heat
Once the pan is hot, add the halloumi cubes with a generous grind of black pepper and cook for 1-2 min or until starting to colour
While the halloumi cubes are cooking, slice the spring onion[s] roughly
Once the halloumi is starting to colour, add the sliced spring onions with the roasted garlic paste, baharat and dried chilli flakes (can't handle the heat? Go easy!) and cook for 1 min further or until fragrant
Once fragrant, add the spinach and cook, covered, for a further 30 secs or until the spinach has wilted
Once wilted, add the steamed white basmati rice with the sultanas and cook for a further 2 min or until the rice is piping hot
Meanwhile, chop the dill roughly, including the stalks
Once done, add the juice of the lemon[s] and give everything a good mix up – this is your fruity halloumi & spinach pilaf
Serve the fruity halloumi & spinach pilaf and garnish with the flaked almonds and chopped dill
