Cooking Instructions
Instructions for 2 people (double for 4)
1 2444 - Cauliflower

Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7

Cut the cauliflower into small florets, discard the stem and leaves

Add the cauliflower florets to a baking tray with the smoked paprika, a drizzle of vegetable oil and a pinch of salt

Give everything a good mix up and put the tray in the oven for 25-30 min or until the cauliflower has charred slightly

2 2444 - Cauliflower

Whilst the cauliflower is cooking, cut the potatoes (skins on) into chips

Add the chips to a baking tray with a generous drizzle of vegetable oil and a pinch of salt

Give everything a good mix up and put the tray in the oven for 20-25 min or until golden and crisp

3 2444 - Cauliflower

While the chips are cooking, add the cashew nuts to a food processor and blitz until you're left with a very fine crumb

Chop the chives finely

4 2444 - Cauliflower

Add the blended cashews and chopped chives to a bowl with the free-from mayonnaise, a pinch of salt and a splash of water and give everything a good mix up – this is your cashew dip

Add the Srirachatomato ketchupsoy saucecider vinegar and cayenne pepper (can't handle the heat? Go easy!) to a pot with 100ml [200ml] cold water

5 2444 - Cauliflower

Add the pot to a medium heat and cook for 1-2 min or until warmed through

Meanwhile, add the cornflour to a small bowl with 1 tbsp [2 tbsp] cold water and mix until you're left with a smooth paste

Add the cornflour paste to the pot and cook further for 1-2 min or until the sauce has thickened – this is your buffalo sauce

Cut the little gem[s] into wedges

Once the cauliflower has roasted, add to the pot with the buffalo sauce and give everything a good mix up - this is your buffalo cauliflower
