Cooking Instructions
Instructions for 2 people (double for 4)
1 Butternut Squash Bhuna & Basmati Rice

Preheat the oven to 200°C/ 180°C (fan)/ 395°F/ Gas 6

Boil a kettle 

Chop the butternut squash[es] into quarters lengthways, de-seed with a spoon, then slice finely

Add the sliced squash to a tin foil lined baking tray with the cherry tomatoes

2 Butternut Squash Bhuna & Basmati Rice

Add half the ground cumin and half the ground coriander (save the rest for later!) to the tray with a generous drizzle of vegetable oil and give everything a good mix up

Put the tray into the oven for 15-18 min or until the squash is tender with a slight bite

3 Butternut Squash Bhuna & Basmati Rice

While the vegetables cook, chop the red chilli[es] finely (can't handle the heat? Go easy!)

Peel and finely chop (or grate) the garlic

Peel (scrape the skin off with a teaspoon) and finely chop (or grate) the ginger

Top, tail, then peel the red onion[s] and cut into wedges

Dissolve the Knorr vegetable stock cube[s] in 250ml [450ml] boiled water

4 Butternut Squash Bhuna & Basmati Rice

Heat a large, wide-based pan (preferably non-stick) with 2 tbsp [4 tbsp] vegetable oil over a medium-high heat 

Once the pan is hot, add the red onion wedges with a pinch of salt, the remaining ground cumin and ground coriander as well as the ground turmeric and cook for 4-5 min or until the onions have softened

Tip: Add a little more vegetable oil if the pan is looking dry

5 Butternut Squash Bhuna & Basmati Rice

Meanwhile, add the basmati rice and 300ml [600ml] cold water with a pinch of salt to a pot with a lid and bring to the boil over a high heat

Once boiling, reduce the heat to very low and cook, covered, for 10-12 min or until all the water has been absorbed and the rice is cooked

Once cooked, remove from the heat and keep covered until serving

6 Butternut Squash Bhuna & Basmati Rice

When the onions have softened, add the chopped ginger, garlic and chilli[es] (not a fan of spice? Only add a little) with the tomato paste and garam masala and cook for 1-2 min or until fragrant

Once fragrant, add the vegetable stock and cook for 2-3 min further, stirring occasionally, or until the sauce has thickened 

Chop the coriander roughly, including the stalks

 

7 Butternut Squash Bhuna & Basmati Rice

Add the cooked squash and cherry tomatoes to the thickened sauce and stir to combine

Season to taste with a pinch of salt – this is your butternut squash bhuna
