Cooking Instructions
Instructions for 2 people (double for 4)

Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7

Boil a full kettle

Chop the grapes and Tenderstem broccoli in half


Add the chopped grapes and Tenderstem broccoli to a baking tray (use tin foil to avoid mess!)

Drizzle half the balsamic vinegar over the grapes and drizzle the Tenderstem broccoli with olive oil

Season both with a pinch of salt and put the tray in the the oven for 12-15 min or until the broccoli has lightly charred


Add the smoked streaky bacon to a separate baking tray

Put the tray in the oven for 15-20 min or until golden and crispy


Meanwhile, add the wheat berries to a pot with plenty of boiled water and a pinch of salt (the same as you would for pasta)

Cook over a high heat for 8-10 min or until tender with a slight bite

Once cooked, drain, return to the pot and leave to cool


Whilst the wheat berries are cooking, combine the remaining balsamic vinegar with the Dijon mustard, 3 tbsp [6 tbsp] olive oil, 1/2 tsp [1 tsp] sugar and a grind of black pepper

Give everything a good mix up – this is your balsamic-mustard dressing


Add the roasted Tenderstem broccoli to the pot with the drained wheat berries

Season with a generous pinch of salt and pepper, add a drizzle of olive oil and mix everything together


Remove the smoked streaky bacon from the oven and chop it roughly with a sharp knife
