Cooking Instructions

Cut the green chilli[es] in half lengthways and deseed (scrape the seeds out with a teaspoon)

Peel (scrape the skin off with a teaspoon) and roughly chop the ginger

Peel and roughly chop the brown onion[s]

Peel and roughly chop the garlic

Chop the tomato[es] into wedges

Add the chopped ginger, onion and garlic to a food processor with the roasted peanuts and 1/2 [1] green chilli (can't handle the heat? Go easy!)

Blitz until smooth – this is your fish stew base

Boil a half a kettle

Heat a large, wide-based pan (preferably non-stick) with a drizzle of vegetable oil over a medium heat

Once hot, add the fish stew base with a generous pinch of salt and cook for 3-4 min or until fragrant

Meanwhile, add the basmati rice and 300ml [600ml] cold water to a pot with a lid and bring to the boil over a high heat

Once boiling, reduce the heat to very low and cook, covered, for 12-15 min or until all the water has absorbed and the rice is cooked

Once cooked, remove from the heat and keep covered until serving

Once the stew base is fragrant, add the turmeric and cook for a further 1-2 min

Meanwhile, remove the coconut cream from the sachet[s] and chop it roughly

Dissolve the chopped coconut cream and Knorr vegetable stock cube[s] in 350ml [600ml] boiled water – this is your coconut stock

Add the coconut stockground almonds and tomato wedges to the pan and give everything a good mix up

Add the basa fillets to the pan and bring to the boil over a high heat

Once boiling, reduce the heat to medium and cook for 6-8 min further or until cooked through, turning your basa fillets over in the pan halfway through

Tip: Your fish is cooked when it turns opaque and flakes easily

While the fish is cooking, chop the coriander roughly including the stalks (save some leaves for garnish!)

Chop the remaining green chilli finely

Add the chopped coriander to the stew and stir it all together – this is your nutty Brazilian fish stew
