Cooking Instructions
Instructions for 2 people (double for 4)

Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7

Chop the potatoes into rough bite-sized pieces


Add the chopped potatoes to one side of a baking tray with a drizzle of olive oil and a pinch of salt


Add the meat-free sausages to the other side of the tray and put the tray in the oven for an initial 18-20 min or until everything is almost cooked through

Tip: Cooking for 4? Use 2 trays!


Whilst everything is cooking, combine the wholegrain mustard with the honey, mayonnaise, red wine vinegar, 1 tbsp [2 tbsp] olive oil and a pinch of salt and pepper in a small bowl – this is your honey-mustard dressing


Peel and cut the red onion[s] into thin petals

Snap the walnuts in half roughly


After an initial 18-20 min, add the red onion petals to the tray

Return the tray to the oven for a further 5 min or until the onion is starting to soften

Add the walnuts for a final 3-4 min or until everything is cooked through and the walnuts are toasted

Meanwhile, chop the apple[s] into matchsticks


Once everything is cooked, add the baby kale, apple matchstickscooked potatoes, red onion and toasted walnuts to a large bowl

Add half of the honey-mustard dressing and gently mix together – this is your honey-mustard salad
