Before you begin...
Get all your ingredients and equipment ready, then skim through these steps
Wash your fruit and veg
Note: Equipment and pan sizes vary. Make sure you cook food thoroughly (even if it takes you a little longer than 10 mins)
Now, let's get started!
Heat a large, wide-based pan (preferably non-stick) with a drizzle of olive oil over a medium-high heat
Peel and roughly chop the shallot[s]
Once the pan is hot, add the chopped shallot with a large pinch of salt and cook for 1 min
Add the diced chorizo and garlic paste with a generous grind of black pepper and cook for 2-3 min further or until the shallot has softened
Meanwhile, slice the Romano pepper[s] into rings
Drain and rinse the canned green lentils and cannellini beans
Add the sliced Romano pepper to the pan along with the drained lentils and cannellini beans and cook for 2-3 min or until everything is warmed through
Meanwhile, cut the lemon[s] into 4  wedges
Chop the cherry tomatoes in half
Chop the parsley finely (including the stalks)
Combine the juice of 2  lemon wedges with the balsamic vinegar and 1 tbsp [2 tbsp] olive oil in a small bowl – this is your dressing
Add the dressing to the pan with 1/2 the chopped parsley and a generous pinch of salt and pepper and give everything a good mix up – this is your warm chorizo, lentil & white bean salad
Serve the warm chorizo, lentil & white bean salad with the chopped cherry tomatoes and rocket leaves over the top
Garnish with the remaining chopped parsley and lemon wedges
