Cooking Instructions
Instructions for 2 people (double for 4)
1 Sausage Burger & Sweet Onion Mayo

Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7

Cut the potatoes (skins on) into wedges

Add the wedges to a baking tray, drizzle with 1 tbsp [2 tbsp] vegetable oil and season generously with salt and pepper

Put them in the oven for 25-30 min or until crisp and browned

Combine the onion marmalade, Dijon mustard, mayonnaise, 1 tbsp [2 tbsp] olive oil in a small bowl with a pinch of salt and pepper – this is your sweet onion marmalade mayo

Peel and chop (or grate) the garlic finely

Heat a large, wide-based pan (preferably non-stick, with a matching lid) over a medium-high heat

Slice the brioche buns in half

Add the brioche halves, cut-side down, to the pan and cook for 1-2 min or until nicely browned then remove from the pan and set aside

Transfer them to a plate and reserve the pan for later

Meanwhile, score the Cumberland sausages by drawing the knife lengthwise along the sausage – but don't cut all the way through

Open the cut side then press down with your hand to flatten them out and form sausage patties

Peel the casing away from the back of the sausages and discard

Return the reserved pan to a medium-high heat

Once hot, add the sausage patties, cover with a lid and cook for 4-6 min, turning midway through until the patties are browned

Tip: Press the patties down with a spatula to keep them flat throughout cooking

Combine the red wine vinegardried oregano and garlic (don't like raw garlic? Go easy!) with a pinch of sugar, salt and pepper and 3 tbsp [6 tbsp] olive oil – this is your dressing

7 Sausage Burger & Sweet Onion Mayo

Wash the little gem lettuce

Tear or chop the little gem leaves into bite-sized pieces and add them to a small bowl

Dress the little gem salad with the dressing
