Preheat the oven to 200°C/ 180°C (fan)/ 400°F/ Gas 6
Drain and rinse the black beans
Heat a large, wide-based pan (preferably non-stick with a matching lid), over a medium heat
Once hot, add a drizzle of vegetable oil, the smoked paprika and cayenne pepper (can't handle the heat? Go easy!) and cook for 1 min
Add the drained black beans and 150ml [250ml] cold water to the pan and bring to the boil
Reduce the heat to low and cook, covered, for 8-10 min or until the beans are beginning to soften
Meanwhile, heat a separate wide-based pan (preferably non-stick) over a medium heat with a generous drizzle of vegetable oil
Once hot, add the diced chorizo and cook for 4-5 min or until it starts to crisp and releases its golden oil
Once crisp, add the panko breadcrumbs and cook for 2 min further – this is your chorizo crumb
While the chorizo is cooking, drain the sweetcorn
Cut the lime[s] into wedges
Chop the cherry tomatoes roughly
Trim, then finely slice the spring onion[s]
Peel and roughly chop (or grate) the garlic
Combine half the chopped garlic (not a fan of raw garlic? Start small!) with the mayo, a pinch of salt and splash of cold water – this is your garlic mayo
Combine the drained sweetcorn, chopped cherry tomatoes, spring onion and the juice of half the lime[s] with a generous pinch of pepper and a drizzle of olive oil – this is your corn salsa
Add the tortilla wraps to a baking tray
Put them in the oven for 2-3 min or until they're warmed through
Once the black beans are beginning to break down, remove them from the heat and mash them into a semi-smooth paste
Add a large knob of butter and the soy sauce – these are your refried beans
Tip: If your beans are looking a little dry, add a splash of water
Top each warmed tortilla with the refried beans, corn salsa and chorizo crumb
Drizzle with the garlic mayo and garnish with the remaining lime wedges
