Cooking Instructions
Instructions for 2 people (double for 4)
1 Herby Lamb & Sweet Potato Curry

Rinse the brown rice, add it to a pot with plenty of cold water and bring to the boil over a high heat

Once boiling, reduce the heat to medium and cook for 20-25 min or until tender with a slight bite

Once cooked, drain and return to the pot, then keep covered until serving

2 Herby Lamb & Sweet Potato Curry

Meanwhile, peel and finely slice the brown onion[s]

Peel and finely chop (or grate) the garlic

Cut the sweet potatoes (skins on) into bite-sized pieces

3 Herby Lamb & Sweet Potato Curry

Heat a large, wide-based pan (preferably non-stick) with a matching lid, with a drizzle of vegetable oil

Once hot, add the ground cinnamon, ground cumin and curry powder and cook for 30 sec over a medium heat

Add the sliced onion and a pinch of salt

Cook the onion for 3 min, then add the chopped garlic and cook for a further 2 min

4 Herby Lamb & Sweet Potato Curry

Boil a kettle

Add the sweet potato and lamb mince to the pan and cook for 5 min or until the lamb has browned and the sweet potatoes are starting to colour

Dissolve the chicken stock cube[s] in 200ml [400ml] boiled water

Add the stock to the pan, cover with a lid and cook for 10 min

Meanwhile, chop the coriander finely, including the stalks

Remove the lid from the pan and cook until the liquid is reduced by half

Once reduced, remove the pan from the heat and stir in the natural yoghurt and chopped coriander  this is your herby lamb & sweet potato curry 

Season the rice lightly with salt and pepper
