Cooking Instructions
Instructions for 2 people (double for 4)
1 2413 - Spicy Jumbo Prawns, Lime & Coriander Yoghurt

Peel and finely chop (or grate) the garlic

Add most of the chopped garlic, smoked paprika, ground cayenne (can't handle the heat? Go easy!) and dried oregano to a large bowl

Add a pinch of salt and pepper and 1 tbsp [2 tbsp] vegetable oil and give it a good mix up – this is your spicy marinade

Add the jumbo prawns to the spicy marinade and gently mix together until the prawns are fully coated in the marinade

Set aside for later

Whilst the prawns are marinating, rinse the quinoa in a sieve under cold running water

Add the quinoa to a pot with a lid with 250ml [500ml] cold water and bring to the boil over a high heat

Once boiling, reduce the heat to low and cook, covered, for 18-20 min or until all the water has absorbed and the quinoa is tender

Once cooked, remove from the heat and leave to steam-dry, uncovered, until serving

Meanwhile, roughly chop the cherry tomatoes

Shred the little gem lettuce[s]

Trim, then chop the spring onions

Add the chopped cherry tomatoes, little gem lettuce and spring onions to a bowl and give it a gentle mix up – this is your salad

Chop the coriander finely, including the stalks

Cut the lime[s] in half

Add the chopped coriander, remaining garlic, natural yoghurt and juice of half [1] lime to a food processor

Add a pinch of salt and blitz until smooth – this is your lime & coriander yoghurt dressing

Tip: Don't have a food processor? Chop the coriander and garlic as finely as you can then mix it all together in a small bowl

Heat a large, wide-based, dry pan (preferably non-stick) over a medium-high heat

Once hot, add the jumbo king prawns and cook for 4-5 min or until the prawns are cooked through
