You'll pan-fry sea bass and serve it alongside potatoes, green beans and an easy chive butter sauce made from a touch of Cornish clotted cream. Simple and delicious and ready in no time – you can't get much butter than that! (Naturally gluten-free, but unsuitable for coeliacs).

Cooking Instructions

1 Pan-Fried Sea Bass, Chive Butter Sauce

Boil a kettle 

Cut the waxy potatoes (skins on) into large, bite-sized chunks

2 Pan-Fried Sea Bass, Chive Butter Sauce

Add the waxy potatoes to a pot, with a matching lid, of boiled water 

Add a pinch of salt and bring back to the boil over a high heat

Once boiling, cover and cook for an initial 7 min

Heat a large, wide-based pan (preferably non-stick) over a high heat with a drizzle of vegetable oil

Pat the sea bass dry and season the skin generously with salt

 

 

4 Pan-Fried Sea Bass, Chive Butter Sauce

Once hot, add the seasoned sea bass, skin-side down and cook for 4 min, then flip and cook for 1 min further

Tip: try not to move the sea bass around the pan, as this will prevent it from crisping up

Once cooked, transfer the cooked sea bass to a plate, cover it with another plate (or tin foil) to keep warm until serving and keep the pan for later

Meanwhile, cut the trimmed green beans in half

Chop the chives finely

6 Pan-Fried Sea Bass, Chive Butter Sauce

Once the potatoes are nearly done, add the halved green beans to the same pot and cook, covered, for 4-8 min further or until both the green beans and potatoes are tender

Once done, drain the lot and set aside until serving

7 Pan-Fried Sea Bass, Chive Butter Sauce

Meanwhile, return the pan to medium heat with 2 tbsp [4 tbsp] butter 

Once melted, add the clotted cream and a splash of milk

Whisk to combine into a thin butter sauce, then remove from the heat and add the chopped chives 

Season with a small pinch of salt and plenty of pepper – this is your chive butter sauce
