Served with caper-buttered green beans, baby potatoes and a lemon mayo for drizzling. Just make sure you eat it before salmon else does!

Cooking Instructions
Instructions for 2 people (double for 4)
1 Lemon & Chive Crusted Salmon

Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7

Boil a kettle

Cut the potatoes into bite-size pieces (skin on)

Trim the green beans

2 Lemon & Chive Crusted Salmon

Add the potatoes to a pot of salted boiled water 

Bring to the boil over a high heat and cook for 15-20 min or until fork tender

Meanwhile, zest the lemon(s) (try to grate lightly with a micro-plane or sharp box grater and avoid grating the white pith, as this is very bitter!)

Chop the chives finely

Chop the capers finely 

4 Lemon & Chive Crusted Salmon

Combine the lemon zest, breadcrumbs, half the chives and 2 tbsp (4 tbsp) olive oil with a big pinch of salt and pepper - this is your breadcrumb mix

Combine the mayonnaise, juice of a quarter (half) the lemon(s) and 2 tbsp (4 tbsp) olive oil - this is your lemon mayo

5 Lemon & Chive Crusted Salmon

Pat the salmon dry and season lightly with salt

Heat a pan (preferably non-stick) with 1 tbsp (2 tbsp) vegetable oil over a high heat

Once very hot, add the salmon (skin-side down)

Cook for 2 min, then transfer the salmon (skin-side down) to a foil lined baking tray (reserve the pan for step 7)

6 Lemon & Chive Crusted Salmon

Spread the Dijon mustard over the salmon fillets

Top with the breadcrumb mixture

Put the tray in the oven for 10 min or until the breadcrumbs are golden and the fish is cooked through (it will flake easily when cooked)

7 Lemon & Chive Crusted Salmon

Return the reserved pan to a medium heat with a large knob of butter

Once hot, add the green beans and capers with splash of water and a lid

Cook for 5-8 min or until the beans are tender
