Before you begin...
Get all your ingredients and equipment ready
Skim through these steps, then wash your fruit and veg
Note: Equipment and pan sizes vary. Make sure you cook food thoroughly (even if it takes you a little longer than 10 mins)
Now, let's get started!
Boil a kettle
Heat a large, wide-based pan (preferably non-stick) with a drizzle of vegetable oil over a medium-high heat
Cut the green beans in half
Once the pan is hot, add the green beans and jumbo king prawns to the pan and cook for 2-3 min or until the beans have started to soften
While the green beans and prawns are cooking, remove the coconut cream from the sachet[s] and chop it roughly
Dissolve the chopped coconut cream, red curry paste and 1 tsp [2 tsp] sugar in 200ml [350ml] boiled water – this is your Thai red curry stock
Squeeze the pouch[es] of steamed brown basmati rice to separate the grains
Tear the top corner of the pouch[es] (just a little!) and put the pouch in the microwave for 2 min or until piping hot
Tip: If you're cooking two packets, pop them in together but increase the microwave cook time accordingly
Add the Thai red curry stock to the pan with a pinch of salt and the chilli flakes (can't handle the heat? Go easy!) and cook for 2-3 min further or until thickened to a loose curry-like consistency – this is your Thai red jumbo prawn curry
Meanwhile, cut the lime[s] into wedges
Once the curry is done, stir through the juice of 1/2  lime
Set the Thai red jumbo prawn curry and heated brown basmati rice in the centre of the table, ready to share
Garnish with the fried onions and remaining lime wedges and let everyone dig in
