Before you begin...

Get all your ingredients and equipment ready

Skim through these steps

2 Ten-Min Smoked Mackerel Kedgeree

Now, let's get started!

Boil half a kettle

Chop the green beans roughly

Chop the cherry tomatoes in half

3 1582. step 3 new

Squeeze the pouch[es] of steamed white basmati rice to separate the grains

Tear the top corner of the pouch[es] (just a little!) and put the pouch in the microwave for 2 min or until piping hot

Tip: If you're cooking two packets, pop them in together but increase the microwave cook time accordingly

While the basmati rice is cooking, remove the skin from the smoked mackerel fillet[s], and discard

Tear the mackerel into rough, bite-sized pieces

Heat a large, wide-based pan (preferably non-stick with a matching lid), with a drizzle of vegetable oil over a medium-high heat

5 Ten-Min Smoked Mackerel Kedgeree

Once hot, add the chopped green beans and cook for 30 secs

Crack the eggs into the pan and stir them occasionally, breaking them into rough, bite-sized pieces

Add the curry powder and ground turmeric and cook for 30 secs further

6 Ten-Min Smoked Mackerel Kedgeree

Dissolve the Knorr vegetable stock cube[s] in 150ml [250ml] boiled water

7 Ten-Min Smoked Mackerel Kedgeree

Add the vegetable stockmackerel piecescherry tomatoes and heated rice to the pan and give everything a good mix up

Increase the heat to high and cook, covered, for 2-3 min or until everything has warmed through and the green beans are tender with a slight bite

Add the juice of 1/2 [1] lemon and stir it all together – this is your smoked mackerel kedgeree
