Now, let's get started!
Heat a large, wide-based pan (preferably non-stick) with a drizzle of vegetable oil over a medium-high heat
Once hot add the salmon fillets, skin-side down, season with a pinch of salt and cook for 8-9 min, turning once, or until cooked through
Tip: Your fish is cooked through when it's opaque and flakes easily
Heat a separate large, wide-based pan (preferably non-stick) with 50g [100g] butter over a medium-high heat
Once melted, add the gnocchi with a pinch of salt and cook for 2-3 min or until starting to brown slightly
Meanwhile, cut the lemon[s] into quarters
When the gnocchi has browned, add the Chinese rice wine and roasted garlic paste and cook for 1 min or until fragrant
Once fragrant, wash and add the spinach and cook for 1 min, stirring frequently, or until just starting to wilt
Add the grated Italian hard cheese and the juice of 1  lemon quarter[s] and give everything a good mix up
Season with a good grind of black pepper – this is your spinach & lemon gnocchi
Serve the cooked salmon over the spinach & lemon gnocchi and garnish with a lemon wedge
