Cooking Instructions
Instructions for 2 people (double for 4)
1 2305 - Za'atar Chicken, Garlic Yoghurt & Herby Rice

Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7

Add the basmati rice and 250ml [500ml] cold water to a pot with a lid and bring to the boil over a high heat

Once boiling, reduce the heat to very low and cook, covered, for 10-12 min or until all the water has absorbed and the rice is cooked

Once cooked, remove from the heat and cover until serving

 

2 2305 - Za'atar Chicken, Garlic Yoghurt & Herby Rice

Meanwhile, cut the red onions into wedges, leaving the skins on (this helps them cook quicker)

Top, tail and slice the courgette[s] into discs

Add the red onion wedges and courgette discs to a baking tray with a drizzle of olive oil and a pinch of salt

Put the tray in the oven for an initial 10-15 min

While the vegetables are cooking, heat a large, dry, wide-based pan (preferably non-stick) over a medium-high heat

Pat the chicken thighs dry with kitchen paper and season them generously on both sides with salt

Once hot, add the chicken, skin-side down and cook for 10 min or until the skins have browned and crisped

Once browned, add the chicken thighs (skin side up) to the tray with the roasting veg

Return the tray to the oven for a further 10-15 min or until the chicken is cooked through (no pink meat!) and the vegetables are tender

While the chicken is cooking, chop the parsley & dill finely, including the stalks 

Peel and grate the garlic

Zest 1/2 [1] lemon

Combine the Greek-style yoghurt with the juice of 1/2 [1] lemon, the grated garlic (don't like raw garlic? Go easy!) and a pinch of salt – this is your garlic yoghurt

Add the toasted sesame seeds, oregano and sumac to a pestle and mortar with a pinch of salt 

Grind to a paste then add 3 tbsp [6 tbsp] olive oil and the lemon zest and give everything a good mix up – this is your za'atar oil

Add the chopped herbs to the cooked basmati rice and stir it all together - this is your herby rice

Once everything is cooked, carefully cut the roots from the red onion and remove the skins

Cut the remaining lemon into 2 [4] wedges
