Cooking Instructions
Instructions for 2 people (double for 4)
1 Spiced Chicken, Feta & Spinach Pilaf

Boil a kettle

Add the baby leaf spinach to a colander and pour over the boiled water so that it starts to wilt

Rinse the wilted spinach under cold water until cool

Squeeze the water out of the spinach, then chop it roughly

Re-boil a kettle

2 Spiced Chicken, Feta & Spinach Pilaf

Dissolve 1/2 [1] Knorr chicken stock cube in 250ml [450ml] boiled water 

Heat a large, wide-based pan (preferably non-stick with a matching lid), with a drizzle of olive oil over a medium heat

Once hot, add the bulgur wheat and cook for 1 min or until it's lightly toasted

Add the chicken stock, chopped spinach and sultanas to the pan and bring to the boil over a high heat

Once boiling, reduce the heat to low and cook, covered, for 10-15 min or until all the water is absorbed and the bulgur is tender with a slight bite

Once cooked, remove from the heat and keep covered until serving

4 Spiced Chicken, Feta & Spinach Pilaf

Meanwhile, place your hand flat onto the chicken breast[s]

Slice in half as if you were cutting a burger bun, so you are left with 2 [4] thinner pieces

Sprinkle the dried oregano and ras el hanout over the chicken pieces with a big pinch of salt and press them into the spices to coat them evenly

Heat a separate large, wide-based pan (preferably non-stick) with a drizzle of vegetable oil over a medium-high heat

Once hot, add the chicken and cook for 5-6 min on each side or until slightly charred and cooked through (no pink meat!)

Meanwhile, chop the tomatoes roughly

Strip the mint leaves from their stems and chop them finely

Combine the chopped tomatoes and mint leaves with a drizzle of olive oil and season with a pinch of salt

7 Spiced Chicken, Feta & Spinach Pilaf

Crumble the feta into the cooked bulgur and give everything a gentle mix
