Cooking Instructions
Instructions for 2 people (double for 4)

Preheat the oven to 200°C/ 180°C (fan)/ 395°F/ Gas 6

Peel and cut the potatoes into thin chips

Add the chips to one side of a baking tray with a generous drizzle of vegetable oil, paprika and a pinch of salt and pepper

Give everything a good mix up and put the tray in the oven for 20 min or until starting to crisp – these are your paprika chips

Add the chicken thighs, cumin, garam masala and a generous pinch of salt to a bowl and give everything a good mix up until the chicken is fully coated

Heat a dry, large, wide-based pan (preferably non-stick) over medium-high heat

Once hot, add the chicken thighs, skin-side down, and cook for 10 min or until the skins have browned and crisped

Reserve the pan

Whilst the chicken is browning, trim the edges from the red cabbage quarter[s] and discard

Slice the red cabbage (as finely as you can!), discard the root

Trim, then slice the spring onion[s] at an angle

Cut the green chilli[es] in half lengthways, deseed (scrape the seeds out with a teaspoon) and slice finely

Once starting to crisp, remove the tray with the paprika chips from the oven and add the chicken thighs (skin-side up!) to the other side of the tray

Return the tray to the oven for a further 6-8 min or until the chicken is cooked through (no pink meat!) and the chips are golden and crispy

Wipe the reserved pan clean and heat over medium-high

Once hot, add the brioche rolls, cut-side down, and cook for 3 min or until toasted and charred, then set aside until serving

Whilst the chicken is cooking, combine the natural yogurtturmeric and a pinch of salt in a small bowl – this is your turmeric yogurt

Add the red cabbage, sliced spring onion and green chilli (can't handle the heat? Go easy!) to a large bowl with half the turmeric yogurt, white wine vinegar and a generous pinch of salt

Give everything a good mix up until fully coated – this is your spicy slaw
