Cooking Instructions
Instructions for 2 people (double for 4)
1 Fiery Chicken, Limey Rice & Mango Salsa

Rinse the brown rice, add it to a pot with plenty of cold water and bring to the boil over a high heat

Once boiling, reduce the heat to medium and cook for 15-20 min or until it's tender with a slight bite

Once cooked, drain and return it to the pot and keep covered until serving

2 Fiery Chicken, Limey Rice & Mango Salsa

Place your hand flat onto the chicken breast[s]

Slice in half as if you were cutting a burger bun, so you are left with 2 [4] thinner pieces

Add the smoked paprika, cayenne pepper (can't handle the heat? Go easy!), ground allspice and soy sauce to a plate with a generous grind of pepper and mix it together to form a paste 

Add the chicken breast pieces and turn until well coated 

3 Fiery Chicken, Limey Rice & Mango Salsa

Heat a large, wide-based pan (preferably non-stick) with 1 tbsp [2 tbsp] vegetable oil over a medium-high heat

Once hot, add the coated chicken and cook for 5-6 min on each side or until cooked through (no pink meat!)

Meanwhile, top, tail and peel the mango[es]

Stand the mango[es] upright and very carefully slice the flesh away from the stone[s]

Tip: If you feel resistance against your knife, it means you are hitting the stone!

Chop the mango flesh into small bite-sized pieces, discarding the stones

 

5 Fiery Chicken, Limey Rice & Mango Salsa

Cut the chilli[es] in half lengthways, deseed (scrape the seeds out with a teaspoon) and chop finely 

Chop the coriander finely, including the stalks

Chop the chilli and half the chopped coriander (you'll use the rest later!) together as finely as you can

Mash the chopped mango with a fork 

Tip: If your mango is a little hard, blitz it in a food processor!

6 Fiery Chicken, Limey Rice & Mango Salsa

Add the mashed mango, chilli and coriander to a small bowl and stir it all together – this is your mango salsa 

Separate the leaves from the little gem lettuce[s]

Finely shred the inner core[s]

7 Fiery Chicken, Limey Rice & Mango Salsa

Drain and rinse the black beans 

Zest 1/2 [1] lime (try to grate lightly with a micro-plane or sharp box grater and avoid grating the white pith, as this is very bitter!) then cut in half 

Add the black beans, lime zest, lime juice and remaining coriander to the cooked brown rice with a generous pinch of salt and give everything a good mix up – this is your limey brown rice and beans
