These quick and easy chicken tacos are inspired by the sunshine of the Caribbean islands! The fresh and fruity flavour of the pineapple is the perfect match for the smoky spiced chicken. Wrapped in our soft flour tortillas, you'll feel like you're already on holiday!

Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7
Drain and finely chop the pineapple (reserve 1 tbsp [2 tbsp] juice for later!)
Chop the tomato[es] finely, then peel and finely dice the shallot[s]
Chop the coriander finely (including the stalks)
Shred the gem lettuce[s]
Combine the chopped pineapple, shallot, tomato and coriander in a bowl with a pinch of salt – this is your pineapple salsa
Combine the mayonnaise and reserved pineapple juice in a second bowl
Top with the shredded lettuce and set aside until later
Tip: Don't mix the lettuce and mayo together until serving! This stops it from going soggy
Slice the chicken breast[s] into thin strips
Add the ground coriander, ground allspice, smoked paprika and a generous pinch of salt and pepper to a plate
Mix all the spices together – this is your Caribbean seasoning
Add the chicken strips to the Caribbean seasoning and turn them until they're fully coated in all the spices
Heat a large, wide-based pan (preferably non-stick) with a drizzle of vegetable oil over a high heat
Once hot, add the chicken and cook for 8-9 min or until cooked through, turning occasionally
Once cooked through, remove the pan from the heat, add the soy sauce and give everything a good mix up
Meanwhile, add the tortillas to a baking tray
Put them in the oven for 2-3 min or until warmed through
Give the shredded lettuce and mayo a good mix up – this is your lettuce slaw
Assemble the tacos by topping the warmed tortillas with the lettuce slaw, Caribbean chicken and pineapple salsa
Enjoy!
