Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7
Boil a kettle
Add the chicken thighs to a baking tray with a generous drizzle of olive oil and a pinch of salt and pepper
Put the tray in the oven for 30-35 min or until the chicken is cooked through
While the chicken is cooking, cut the leek[s] in half lengthways and wash carefully to remove any grit from between the leaves
Slice the leek[s] finely, discarding the tough tops, outer leaves and root end[s]
Peel and finely chop (or grate) the garlic
Rip the chestnut mushrooms into rough pieces
Dissolve the Knorr chicken stock cube[s] in 400ml [800ml] boiled water
Add the orzo pasta, chopped garlic, sliced leek, and chestnut mushrooms to an oven-proof dish
Pour over the chicken stock, making sure all of the orzo is covered
Put the dish in the oven for 20-25 min or until the orzo is tender with a slight bite
Meanwhile, chop the tarragon finely, including the stalks
Grate the cheddar cheese
Use the remaining time to clear up, set the table, have a cup of tea or simply chill!
Once the orzo is cooked, stir half the chopped tarragon and all the grated cheese through the orzo
Season with a generous pinch of salt and pepper
Serve the mushroom & tarragon orzo topped with the crispy chicken
Season with a generous grind of black pepper, garnish with the remaining tarragon and drizzle with some olive oil
