Cooking Instructions
Instructions for 2 people (double for 4)
1 Chicken Milanese & Baby Kale Pesto

Preheat the oven to 180°C/ 160°C (fan)/ 350°F/ Gas 4

Boil a kettle 

Add the baby plum tomatoes to a baking tray with a drizzle of olive oil, a pinch of salt and a large pinch of sugar

Put the tray in the oven for 25-30 min or until the tomatoes start to wrinkle

Peel and chop the potatoes roughly into bite-sized pieces

Add the potatoes to a pot of boiled water with a pinch of salt and cook over a high heat for 15 min or until they're fork-tender

Meanwhile, place your hand flat on the chicken breast[s] on a chopping board

Slice in half as if you were cutting a burger bun, so you are left with 2 [4] thinner pieces

4 Chicken Milanese & Baby Kale Pesto

Crack the egg[s] into a shallow bowl and mix well

Add 4 tbsp [8 tbsp] flour to a plate and season with salt and pepper, then add the panko breadcrumbs to another plate 

Coat the sliced chicken in the flour, tap off the excess, then add it into the beaten egg and finally press it into the breadcrumbs firmly to evenly coat all over

 

5 Chicken Milanese & Baby Kale Pesto

Heat a large, wide-based pan, (preferably non-stick) with 4 tbsp [6 tbsp] vegetable oil over a medium heat

Once hot, add the chicken and cook for 4-5 min on each side pressing down firmly with a spatula until the outside is golden and the chicken is cooked through

Meanwhile, add the baby kale to a food processor

Peel the garlic and grate the cheddar cheese

Add half [all] of the peeled garlic, the grated cheese, the almonds, 50ml [100ml] olive oil, a splash of cold water and 1 tsp [2 tsp] salt to the processor

Blitz until very smooth and set aside – this is your kale pesto

7 Chicken Milanese & Baby Kale Pesto

Once cooked, drain the potatoes and return them to the pot with a large knob of butter

Mash them until smooth

Add half of the kale pesto to the pot, then mix to combine – this is your green mash
