Cooking Instructions
Instructions for 2 people (double for 4)

Boil a kettle

Add the bulgur wheat to a pot with plenty of boiled water and a pinch of salt

Bring to the boil over a high heat and cook for 7-9 min or until tender with a slight bite

Once cooked, drain and return to the pot

While the bulgur wheat is cooking, heat a large, dry, wide-based pan (preferably non-stick) over a medium-high heat

Once hot, add the flaked almonds and cook for 2-3 min or until toasted and golden

Once toasted, transfer to a plate and reserve the pan

Add the chicken breasts to a plate with the ras el hanout and rub until fully coated

Return the reserved pan to a medium-high heat with 1/2 tbsp [1 tbsp] olive oil

Once hot, add the spiced chicken and cook for 3 min on each side until cooked through (no pink meat!) and golden

Add a couple of splashes of water to the pan and cover with a lid

Cook for a further 12-15 min or until the chicken is cooked through (no pink meat!)

While the chicken is cooking, roughly chop the cherry tomatoes

Drain and rinse the chickpeas

Strip the mint leaves from their stems and chop them finely, discard the stems

Chop the parsley finely, including the stalks

Chop the lemon[s] in half

Combine the juice of 1/2 [1] lemon with the harissa paste (can't handle the heat? Go easy!), half [all] the honey, 1 tbsp [2 tbsp] olive oil and a pinch of salt in a small bowl – this is your honey harissa dressing

Add the chopped tomatoes, drained chickpeas, chopped herbs and juice of the remaining lemon to the cooked bulgur wheat

Give everything a good mix up – this is your herby bulgur
