These chicken skewers are flavoured with the spice blend baharat, which translates simply to 'spices' in Arabic. It includes a mixture of casia, cloves and cumin, which creates a warm, sweet flavour that pairs perfectly with chicken. You'll serve them over a simple 'jewelled' bulgur salad of nutty wheat, onions, almonds and dill. Enjoy!

Cooking Instructions
Instructions for 2 people (double for 4)
1 Baharat-Spiced Chicken Skewers

Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7

Soak the skewers in cold water

Boil a kettle

Lay the chicken breasts flat on a cutting board and slice each breast lengthways into four strips

2 Baharat-Spiced Chicken Skewers

Place the chicken strips in a large mixing bowl

Rub all over with the baharat, 1 tbsp [2 tbsp] olive oil and 1/2 tsp of both salt and pepper

Thread 2 chicken strips onto each skewer in a snake like fashion and set aside

 

3 Baharat-Spiced Chicken Skewers

Add the bulgur to a pot with plenty of boiled water (the same as you would for pasta)

Cook over a high heat for 10-15 min or until tender with a slight bite, then drain and return to the pot

4 Baharat-Spiced Chicken Skewers

Meanwhile, peel and finely chop (or grate) the garlic

Peel the onion[s], cut them in half and slice finely

Bash the almonds roughly in the bag with a rolling pin (alternatively, chop them up)

 

5 Baharat-Spiced Chicken Skewers

Heat a large, dry, wide-based pan (preferably non-stick) over a high heat

Add the skewers to the pan and cook for 2 min on each side, or until browned 

Transfer the skewers to a baking tray and put it in the oven for 8-10 min, or until the chicken is cooked through

6 Baharat-Spiced Chicken Skewers

Meanwhile, whisk together the honey, cider vinegar and 1 tbsp [2 tbsp] olive oil in a small bowl - this is your dressing 

Chop the dill roughly, including the stalks

7 Baharat-Spiced Chicken Skewers

Return the pan to a medium heat with 1 tbsp [2 tbsp] vegetable oil

Once hot, add the almonds, onion and garlic and cook for 2-4 min, or until browned and crispy

Remove the pan from the heat and mix in the cooked bulgur

Season lightly with salt and pepper
