You'll use our creamy, mild goats’ cheese two ways in this easy pasta dish. You'll stir it into rich chopped tomatoes to create a simple creamy sauce, with wilted baby spinach and a kick of chilli. And you'll coat the rest in black pepper and crumble it over as garnish.

1 Tangy Tomato & Goats' Cheese Pasta

Boil a kettle

Peel and finely chop (or grate) the garlic

2 Tangy Tomato & Goats' Cheese Pasta

Heat a medium-sized pot with a large drizzle of olive oil over a low heat

Once hot, add the chopped garlic and chilli flakes (can't handle the heat? Go easy!)

Allow them to sizzle in the oil for 30 sec

3 Tangy Tomato & Goats' Cheese Pasta

Carefully add the chopped tomatoes

Increase the heat to medium and cook for 10-15 min until the tomatoes have reduced to the consistency of a thick sauce

4 Tangy Tomato & Goats' Cheese Pasta

Meanwhile, add the linguine to a large pot of boiled water with a big pinch of salt over a high heat

Bring to the boil and cook for 8-10 min, or until cooked with a slight bite

5 Tangy Tomato & Goats' Cheese Pasta

Meanwhile, wash, dry, and chop the baby spinach roughly

6 Tangy Tomato & Goats' Cheese Pasta

Add the chopped spinach to the linguine

Cook for 30 sec until the spinach has wilted, then drain the lot and return to the pot

Once the tomato sauce has thickened, stir in 1-2 tsp salt, 1-2 tsp sugar and the red wine vinegar

7 Tangy Tomato & Goats' Cheese Pasta

Grind pepper onto a chopping board and roll the goats' cheese log[s] in the pepper to coat, then cut the log[s] in half

Remove the tomato sauce from the heat and stir in half the goats' cheese, keeping the rest for serving
