Cooking Instructions
Instructions for 2 people (double for 4)
1 Indian Sweet Potato Chips & Beans

Preheat the oven to 230°C/ 210°C (fan)/ 450°F/ Gas 8 and boil a kettle

Cut the sweet potatoes (skins on) into thick wedges

Add the sweet potato wedges to a baking tray, skin-side down, drizzle with vegetable oil, and season generously with salt and pepper

Put the tray in the oven for 30 min or until they're crispy

2 Indian Sweet Potato Chips & Beans

Peel and chop the red onion[s]

Peel and finely chop (or grate) the garlic

Heat a medium pot (preferably non-stick) with 2-3 tbsp olive oil over a medium-low heat

Once hot, add the chopped onion, garlic and a pinch of salt, and cook for 3 min or until the onion has softened, then add the curry powder and cook for 1 min further

Meanwhile, dissolve 1/2 [1] Knorr vegetable stock cube in 100ml [200ml] boiled water

Add the stock and chopped tomatoes to the softened onion

Add the Henderson's Relish and 1 tbsp [2 tbsp] sugar (preferably brown) and bring to the boil over a high heat

4 Indian Sweet Potato Chips & Beans

Once boiling, reduce the heat to medium-low and cook for 10-15 min or until it thickens to resemble a pasta sauce-like consistency

While the sauce thickens, drain and rinse the cannellini beans

Add the cannellini beans to the sauce, reduce the heat to low and warm through until you're ready to serve – these are your curried beans

5 Indian Sweet Potato Chips & Beans

Chop the coriander finely, including the stalks

6 Indian Sweet Potato Chips & Beans

Check that your sweet potato wedges are cooked (you don't want to move onto the eggs until your wedges are crispy!)

7 Indian Sweet Potato Chips & Beans

Heat a separate, large, wide based pan (preferably non-stick with a matching lid), with a drizzle of vegetable oil over a medium-low heat

Crack the eggs into a bowl, keeping the yolks whole

Add the eggs to the pan in one go

Cook, covered for 3 min or until done to your liking
