A predominantly vegetarian region, pulses and lots of fresh vegetables usually form the base for curries in this area. Here you'll create an aubergine curry known as 'ringra nu shaak', and will serve it with a cumin & cucumber raita.

Cooking Instructions

1 Gujarati-Style Aubergine Curry With Raita

Preheat the grill to high

Add 1 [2] aubergine[s] to a foil-lined baking tray and pierce a few times with a knife, then put the tray under the grill for 20-25 min or until blackened all over and fork-tender 

Remove the tray from the oven and carefully cut each aubergine in half, scoop the flesh into a bowl and season generously with salt – this is your smoky aubergine

2 Gujarati-Style Aubergine Curry With Raita

Boil a kettle

Once the smoky aubergine is cooked, turn off the grill and heat the oven to 200°C/ 180°C (fan)/ 395°F/ Gas 6

Meanwhile, peel and slice the red onion[s] finely

Peel and finely chop (or grate) the garlic

Peel and finely chop (or grate) the ginger 

Peel and dice the remaining aubergine[s]

 

3 Gujarati-Style Aubergine Curry With Raita

Heat a large, wide-based pan (preferably non-stick) over a medium-high heat with 2 tbsp [4 tbsp] vegetable oil

Add the sliced onions with a pinch of salt and cook for 8-10 min or until starting to soften

Add the chopped garlic, ginger and aubergine and continue to cook for 3-4 min

Tip: if your pan starts to look dry, add a little more vegetable oil

4 Gujarati-Style Aubergine Curry With Raita

Once fragrant, add the ground coriandercayenne (Can't handle the heat? Go easy!), half of the ground cumin (you'll use the rest later), tomato paste and 1/2 [1] vegetable stock cube with 250ml [400ml] boiled water

Reduce the heat to medium and cook the curry, covered, for 8-10 min or until the chopped aubergine is cooked through – this is your Gujarati-style aubergine curry

 

5 Gujarati-Style Aubergine Curry With Raita

Dice the cucumber finely and add to a bowl

Chop the coriander roughly, including stalks

Gently mash the smoky aubergine with a spoon

Once the chopped aubergine is cooked through, stir the smoky aubergine and chopped coriander through the curry

Remove from the heat and set aside until serving

6 Gujarati-Style Aubergine Curry With Raita

Meanwhile, add the natural yoghurt and remaining ground cumin with a pinch of salt, pepper and 1/2 tsp [1 tsp] sugar to the diced cucumber and give everything a good mix up – this is your cumin & cucumber raita

7 Gujarati-Style Aubergine Curry With Raita

Add the naans to a baking tray

Put the baking tray in the oven for 3-4 min or until the naans are hot

Once hot, spread with butter and sprinkle with the nigella seeds
