Cooking Instructions
Instructions for 2 people (double for 4)
1 Grilled Paneer, Spiced Veg & Tomato Wraps

Chop the coriander finely, including the stalks

Peel and finely chop (or grate) the garlic and ginger

Cut the lemon[s] in half

Cut the red chilli[es] in half lengthways, deseed (scrape the seeds out with a teaspoon) and chop finely

2 Grilled Paneer, Spiced Veg & Tomato Wraps

Add the chopped coriandergarlic, and ginger to a pestle and mortar with 1 tsp [2 tsp] cold water and grind to a paste

Add 1 tbsp [2 tbsp] olive oil, the juice of 1/2 [1] lemon, a pinch of salt and a pinch of sugar and mix to combine

Stir through the chopped chilli (can't handle the heat? Go easy!) – this is your spicy coriander chutney

Peel and finely slice the red onion[s]

Deseed the green pepper[s] (scrape the seeds and pith out with a teaspoon) and cut into thin strips (as finely as you can!)

4 Grilled Paneer, Spiced Veg & Tomato Wraps

Heat a large, wide-based pan (preferably non-stick) with a drizzle of vegetable oil over a medium-high heat

Once hot, add the green pepper strips and sliced red onion with a pinch of salt and cook for 7-8 min or until softened

Preheat the oven to 140°C/ 120°C (fan)/ 275°F/ Gas 1

Whilst the vegetables are softening, dice the tomato[es] finely

Top, tail, peel, then grate the carrot[s]

6 Grilled Paneer, Spiced Veg & Tomato Wraps

Once the vegetables have softened, add the garam masalaground turmeric and tomato paste to the pan and cook for 1 min

Add 100ml [180ml] cold water with the juice of the remaining lemon and a generous pinch of salt and cook for 4-5 min or until the sauce has thickened and begins to coat the vegetables

Once done, remove the pan from the heat – these are your curried vegetables

7 Grilled Paneer, Spiced Veg & Tomato Wraps

Meanwhile, cut the paneer into 12 [24] equal strips

Heat a large, wide-based pan (preferably non-stick) with a drizzle of vegetable oil over a medium heat

Once hot, add the paneer strips with a generous pinch of salt and cook for 3-4 min, turning once halfway, until golden

Add the tortillas to a baking tray and put the tray in the oven for 2-3 min or until warmed through
