Cooking Instructions
Instructions for 2 people (double for 4)
1 Triple Cheese Cheat's Pizza

Preheat the oven to 240°C/ 220°C (fan)/ 475°F/ Gas 9

Put a large baking tray in the oven to heat up (this will stop the pizza bottoms from going soggy!)

Peel and finely chop (or grate) the garlic

2 Triple Cheese Cheat's Pizza

Grate the cheddar and Italian hard cheese

Drain the mozzarella and pat it dry with kitchen paper

Tear the drained mozzarella into rough bite-sized pieces

3 Triple Cheese Cheat's Pizza

Add the chopped garlic, dried oregano and tomato paste to a small bowl with a generous drizzle of olive oil and 2 tbsp [4 tbsp] cold water

Season with a pinch of salt, sugar and pepper and mix to combine – this is your tomato sauce

4 Triple Cheese Cheat's Pizza

Add the plain naans to the heated baking tray, divide and spoon the tomato sauce over them evenly

Top with the grated cheddar, Italian hard cheese and torn mozzarella

Put the tray in the oven for 10-15 min or until the cheese is bubbling and starting to brown – these are your triple cheese pizzas

5 Triple Cheese Cheat's Pizza

Meanwhile, peel and finely chop the shallot[s] as finely as you can

Add the chopped shallot, balsamic vinegar, 2 tbsp [4 tbsp] olive oil and 1 tsp [2 tsp] sugar to a large mixing bowl

Season generously with both salt and pepper and mix to combine – this is your balsamic dressing

7 Triple Cheese Cheat's Pizza

Wash and dry the baby leaf salad

Once the pizzas are nearly done, add the mixed leaf salad and pine nut & seed mix to the bowl with the balsamic dressing and give everything a good mix up – this is your seedy balsamic salad
