This velvety, vegetarian stroganoff is made with chestnut mushrooms, crème fraîche, smoked paprika and thyme and served over linguine for the ultimate in comfort food flavour. Try not to stir the chestnut mushrooms while they cook so that they become wonderfully caramelised. Caramelisation = maximum flavour!

Cooking Instructions
Instructions for 2 people (double for 4)
1 Creamy Mushroom Stroganoff

Peel and finely slice the red onion[s]

Heat a large, wide-based pan (preferably non-stick) with a drizzle of olive oil and 1-2 tbsp butter over a medium heat

Once melted, add the sliced onion with a pinch of salt and cook for 10 min or until soft and translucent

2 Creamy Mushroom Stroganoff

Meanwhile, boil a kettle

Peel and finely chop (or grate) the garlic

Cut the chestnut mushrooms into quarters

Strip the thyme leaves from their stalks and chop finely

3 Creamy Mushroom Stroganoff

Add the chopped garlic, mushrooms, half of the smoked paprika and half of the chopped thyme to the pan (you will use the rest later)

Season with salt and a generous amount of pepper 

Spread it out as much as possible and allow to cook without stirring for 5-10 min or until caramelised

4 Creamy Mushroom Stroganoff

Meanwhile, add the linguine to a pot of salted boiled water, bring to the boil over a high heat and cook for 8-12 min or until cooked with a slight bite 

Once cooked, drain and reserve 200ml [400ml] of the starchy cooking water 

5 Creamy Mushroom Stroganoff

Meanwhile, dissolve the vegetable stock cube[s] in 200ml [400ml] boiled water and mix well

Combine the remaining chopped thyme, 1/2 [1] pot of crème fraîche and a generous amount of pepper in a separate bowl and mix well

6 Creamy Mushroom Stroganoff

Add half of the vegetable stock to the pan, increase the heat to medium-high and cook until the stock has completely absorbed

Add the remaining smoked paprika and stir well

7 Creamy Mushroom Stroganoff

Add the drained linguine to the vegetable pan

Add the remaining stock, reduce by half, then add the seasoned crème fraîche and stir to combine

Remove from the heat before fully reduced (while it's still saucy) – this is your mushroom stroganoff

Tip: add a little reserved starchy water if the linguine is too dry
