1 Cheesy Tomato Gnocchi Tray Bake

Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7

Boil half a kettle

Peel and finely chop (or grate) the garlic

Grate the cheddar cheese

Tear the drained mozzarella into rough, bite-sized pieces

Combine the chopped tomatoes, tomato paste and chopped garlic with 50ml [100ml] boiled water, a pinch of salt and sugar in an oven-proof dish

Add the baby spinach, cherry tomatoes and half of the gnocchi to the dish and give everything a good mix up

Add the remaining gnocchi on top

Top with the grated cheddar and torn mozzarella

Season with a generous grind of black pepper

Put the dish into the oven and cook for 25-30 min or until golden and crisp
