Cooking Instructions
Instructions for 2 people (double for 4)
1 Cheesy Cheddar Risotto & Cherry Toms

Preheat the oven to 180°C/ 160°C (fan)/ 400°F/ Gas 6

Add the cherry tomatoes to a baking tray (use tin foil to avoid mess!)

Drizzle them with olive oil, then season with a pinch of both salt and sugar

Put them in the oven to slow-roast until serving (approx. 30 min)

Meanwhile, boil a kettle

Wash the leek[s] carefully to remove any grit from between the leaves, then slice finely, discarding the root end[s]

3 Cheesy Cheddar Risotto & Cherry Toms

Dissolve the vegetable stock cube[s] in 700ml [1.4L] boiled water

 

4 Cheesy Cheddar Risotto & Cherry Toms

Heat a large, wide-based pan (preferably non-stick) with 1-2 tbsp olive oil and a knob of butter over a medium heat

Once hot, add the sliced leek with a pinch of salt and cook for 4 min until softened

Meanwhile, peel and finely chop (or grate) the garlic

Add the arborio rice, chopped garlic and half [all] of the ground turmeric to the pan and cook for 1 min

Add the Chinese wine and Dijon mustard, then cook for a further 1 min

6 Cheesy Cheddar Risotto & Cherry Toms

Add 1/3 of the stock and stir continuously with a wooden spoon until it has been absorbed

Continue to add the stock, a ladle at a time, stirring continuously for 15-20 min, until all the stock is absorbed and the rice is cooked – this is your risotto

Meanwhile, grate the cheddar cheese

Chop the chives finely

Once cooked, remove the risotto from the heat and stir in the grated cheese, clotted cream, half of the chopped chives and season with pepper
