Glamorgan ‘sausages’ are little Welsh vegetarian sausages that hark back to the 17th Century. Originally they were made from local leeks and Glamorgan cheese. We’ve opted for tangy cheddar and turned our bangers into patties for a modern twist

Cooking Instructions
Instructions for 2 people (double for 4)
1 Cheese & Leek Glamorgan Patties

Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7

Cut the potatoes (skins on) into wedges

Place them on a baking tray, drizzle with vegetable oil and season generously with salt and pepper

Put them in the oven for 15 min

Tip: If cooking for four, divide between 2 trays

2 Cheese & Leek Glamorgan Patties

Meanwhile, separate the yolk[s] and white[s] of the egg[s] into two shallow bowls

Cut the leeks in half and wash carefully to remove any grit from between the leaves

Slice the leeks finely, discarding the tops and tails

3 Cheese & Leek Glamorgan Patties

Heat a large, wide-based pan (preferably non-stick) with 1 tbsp [2 tbsp] butter over a medium-high heat

Once melted, add the sliced leek and 30ml [60ml] water then cook for 3 min or until the water has absorbed

Transfer the cooked leeks onto a plate and place them in the freezer to cool completely (keep the pan for later!)

Meanwhile, grate the cheddar

Cut the tomato[es] and red onion[s] into wedges, discarding the skins

After the potatoes have had their initial 15 min, remove the tray[s] from the oven and move the potatoes to one side

Add the tomato and onion wedges and return the tray[s] to the oven for a further 15-20 min or until the potatoes have browned and crisped

5 Cheese & Leek Glamorgan Patties

Combine half of the panko breadcrumbs with the grated cheese, cooled leek, egg yolk and half of the wholegrain mustard (save the rest for later)

Season generously with salt and pepper

Divide in 2 [4] and shape into patties

Gently coat the patties in the egg white and coat them in the remaining breadcrumbs – these are your Glamorgan patties

6 Cheese & Leek Glamorgan Patties

Return the pan to a medium-low heat with 2 tbsp [4 tbsp] vegetable oil

Once hot, add the patties and cook for 4-5 min on each side until browned and crispy, adding more vegetable oil if needed

Tip: resist fiddling with the patties so they hold their shape!

7 Cheese & Leek Glamorgan Patties

Meanwhile, combine the mayonnaise with the remaining mustard, a pinch of both salt and pepper and a drizzle of olive oil – this is your wholegrain mayo

Wash and dry the lamb's lettuce
