Get this Indian-inspired salad on your table in no time! You'll pan-fry paneer in curry powder and sticky mango chutney until nicely golden, and serve over a simple beluga lentil salad with herbs. Easy!

Note: Equipment and pan sizes vary. Make sure you cook food thoroughly (even if it takes you a little longer than 10 mins)
Now, let's get started!
Top, tail (no need to peel!) and grate the carrot[s] into a very large bowl
Chop the cherry tomatoes in half and add them to the bowl
Microwave the beluga lentils according to packet instructions
Tip: If you're cooking two packets, pop them in together but increase the microwave cook time accordingly!
Heat a large, wide-based pan (preferably non-stick) with a drizzle of vegetable oil over a medium heat
Chop the paneer into bite-sized pieces
Once hot, add the chopped paneer and curry powder and cook for 3 min, turning once halfway, until golden
While the paneer is cooking, combine half of the mango chutney with the white wine vinegar, 3 tbsp [6 tbsp] olive oil and a pinch of salt and pepper – this is your mango dressing
Chop the herbs roughly, discarding any tough stalks
Increase the heat to high and add the remaining mango chutney and nigella seeds to the pan with the paneer
Cook for a further 1 min or until sticky – this is your sticky paneer
Add the baby leaf salad, warmed lentils and mango dressing to the bowl with the carrot and tomatoes and give everything a good mix up – this is your Indian salad
Set the Indian salad in the centre of the table, ready to share
Top with the sticky paneer and chopped herbs and let everyone dig in
