Cooking Instructions
Instructions for 2 people (double for 4)
1 1970 - 10-Min Beany Avo Tacos

Before you begin...

Get all your ingredients and equipment ready

Skim through these steps

Wash your veg

Note: Equipment and pan sizes vary. Make sure you cook food thoroughly (even if it takes you a little longer than 10 mins)

2 1970 - 10-Min Beany Avo Tacos

Now, let's get started!

Chop the Romano pepper[s] roughly

Tip: Slice into rings for speedy chopping

Heat a large, wide-based pan (preferably non-stick) with 1 tbsp [2 tbsp] vegetable oil over the highest heat

Once your pan is hot, add the sliced pepper and cook for 3 min or until starting to soften

3 1970 - 10-Min Beany Avo Tacos

While the pepper softens, boil a kettle

Add the chipotle paste (can't handle the heat? Go easy!) to a bowl with the soured cream and give it a good mix up – this is your chipotle cream

Drain and rinse the black beans

4 1970 - 10-Min Beany Avo Tacos

Add the black beans, tomato paste, ground cumin and smoked paprika to the pepper and cook for 30 sec

Add 100ml [150ml] boiled water and the soy sauce

Add a generous pinch of salt and cook for 3 min or until thickened – these are your smoky beans

5

While the smoky beans cook, add the seeded tortillas to a plate

Put the plate in the microwave and cook for 1-2 min or until warmed through

6 1970 - 10-Min Beany Avo Tacos

Meanwhile, cut the avocado[es] in half lengthways, around the stone[s]

Remove the stone[s] using a teaspoon

Scoop the avocado out of the skin[s] using a spoon and slice

7 1970 - 10-Min Beany Avo Tacos

Cut the lime[s] into wedges

Shred the little gem lettuce finely

Squeeze the juice of 1/2 [1] lime into the smoky beans
