Before you begin...

Get all your ingredients and equipment ready

Skim through these steps

Wash your veg

Note: Equipment and pan sizes vary. Make sure you cook food thoroughly (even if it takes you a little longer than 10 mins)

Now, let's get started!

Chop the Romano pepper[s] roughly

Tip: Slice into rings for speedy chopping

Heat a large, wide-based pan (preferably non-stick) with a 1 tbsp [2 tbsp] vegetable oil over the highest heat

Once your pan is hot, add the garlic paste and sliced pepper and cook for 3 min or until starting to soften

While the pepper softens, boil a kettle

Add the chipotle paste (can't handle the heat? Go easy!) to a bowl with the soured cream and give it a good mix up – this is your chipotle soured cream

Drain and rinse the black beans

Add the black beans, tomato paste, ground cumin and smoked paprika to the pepper and cook for 30 sec

Add 100ml [150ml] boiled water and the soy sauce

Add a generous pinch of salt and cook for 3 min or until thickened – these are your smoky beans

While the smoky beans cook, add the seeded tortillas to a plate

Put the plate in the microwave and cook for 1-2 min or until warmed through

Meanwhile, cut the avocado[es] in half lengthways, around the stone[s] 

Remove the stone[s] using a teaspoon

Scoop the avocado flesh out of the skin[s] using a spoon and slice

Cut the lime[s] into wedges

Shred the little gem lettuce[s] finely 

Squeeze the juice of 1/2 [1] lime into the smoky beans
