1 Sticky Sesame Tofu & Asparagus Noodles

Boil a kettle

Cut the asparagus in half

2 Sticky Sesame Tofu With Noodles & Veg

Combine the sriracha hot chilli sauce (can't handle the heat? Go easy!), agave nectar and half the soy sauce (save the rest for later!) in a small bowl – this is your sticky sauce

3 Sticky Sesame Tofu With Noodles & Veg

Add the wholewheat noodles to a pot and cover them with boiled water

Bring to the boil over a high heat and cook for an initial 3 min

Meanwhile, heat a large, wide-based pan (preferably non-stick) with a drizzle of vegetable oil over a very high heat

Drain the plain tofu and pat it dry with kitchen paper

Cut the dried tofu in half and then cut each half into thick strips

4 Sticky Sesame Tofu With Noodles & Veg

Once hot, add the tofu strips to the pan with a generous pinch of salt and cook for 2-3 min on each side or until crisp

Meanwhile, add the chopped asparagus to the pot with the noodles and cook for a further 3 min or until everything is tender with a slight bite

Once done, drain and return to the pot

Chop the lime[s] in half

Add the toasted sesame oil to the noodles with the juice of half the lime and the remaining soy sauce and give everything a good mix up – these are your asparagus noodles

6 Sticky Sesame Tofu With Noodles & Veg

Once the tofu is crisp, reduce the heat to medium and add the sticky sauce

Cook for 1 min further until sticky and caramelised

Once caramelised, add the black sesame seeds and 50ml [100ml] boiled water and cook for 30 secs further, or until slightly loosened – this is your sticky sesame tofu

7 Sticky Sesame Tofu With Noodles & Veg

Cut the remaining lime into wedges

Trim, then slice the spring onion[s]
